🥘 Ingredients
8 oz rice noodles
½ lb shrimp
2 eggs
¼ cup peanuts, crushed
2 cups bean sprouts
3 green onions, sliced
3 tbsp fish sauce
2 tbsp tamarind paste
Lime wedges
👨🍳 Instructions
1. Soak rice noodles in warm water 30 minutes, drain
2. Heat oil in wok, scramble eggs and set aside
3. Stir-fry shrimp until pink, remove
4. Add garlic, then noodles
5. Toss with fish sauce, tamarind paste, and brown sugar
6. Return eggs and shrimp to wok
7. Add bean sprouts and green onions
8. Toss everything together 2-3 minutes
9. Serve with crushed peanuts and lime wedges
