🥘 Ingredients
4 cups cooked rice, cold
3 eggs
2 cups frozen mixed vegetables
3 tbsp soy sauce
2 cloves garlic
2 tbsp sesame oil
3 green onions, sliced
👨🍳 Instructions
1. Heat oil in wok or large skillet over high heat
2. Beat eggs, pour into hot wok and scramble
3. Remove eggs and set aside
4. Add frozen mixed vegetables, stir-fry 3-4 minutes
5. Push veggies to side, add day-old cold rice
6. Break up rice clumps with spatula
7. Return scrambled eggs to wok
8. Add soy sauce and sesame oil, toss together
9. Garnish with sliced green onions
