🥘 Ingredients

3 lb beef chuck roast 4 carrots, cut into chunks 4 potatoes, quartered 2 onions, quartered 3 cups beef broth 2 tbsp tomato paste Thyme, rosemary

👨‍🍳 Instructions

1. Season beef chuck roast with salt, pepper, and garlic powder 2. Heat olive oil in large Dutch oven over medium-high heat 3. Brown roast on all sides (3-4 minutes per side) 4. Remove roast, add chopped onions and carrots to pot 5. Sauté 5 minutes, then add garlic 6. Pour in beef broth and red wine 7. Return roast to pot with potatoes, bay leaves, and thyme 8. Cover and braise in 325°F oven for 3-4 hours until fork-tender 9. Let rest 15 minutes, slice and serve with vegetables
