1. Preheat oven to 375°F
2. Cook diced chicken in skillet until done, set aside
3. Make cream sauce: melt butter, whisk in flour, add chicken broth and cream
4. Stir in cooked chicken and frozen mixed vegetables
5. Season with salt, pepper, and thyme
6. Pour filling into 9-inch pie dish
7. Roll out pie crust and place over filling
8. Cut slits for steam, brush with egg wash
9. Bake 35-40 minutes until golden brown
