🥘 Ingredients
2 lbs beef stew meat
4 potatoes, cubed
3 carrots, sliced
2 onions, diced
4 cups beef broth
2 tbsp tomato paste
Bay leaves
Thyme
👨🍳 Instructions
1. Cut beef chuck into 1-inch cubes
2. Season with salt and pepper, dredge in flour
3. Brown beef in large pot with olive oil, remove and set aside
4. Sauté diced onions, carrots, and celery in same pot
5. Add minced garlic and tomato paste, cook 1 minute
6. Pour in beef broth and red wine
7. Return beef to pot with bay leaves and thyme
8. Bring to boil, reduce to simmer, cover
9. Cook 2-3 hours until beef is tender, add potatoes in last hour
