🥘 Ingredients
1 large butternut squash
2 onions, diced
4 cups vegetable broth
1 cup heavy cream
2 tbsp butter
Nutmeg, cinnamon
Salt and pepper
👨🍳 Instructions
1. Preheat oven to 400°F
2. Cut butternut squash in half, remove seeds
3. Roast cut-side down on baking sheet 45 minutes until tender
4. Meanwhile, sauté diced onions in butter until soft
5. Scoop out roasted squash flesh
6. Add squash and onions to blender with vegetable broth
7. Blend until smooth
8. Pour into pot, stir in cream, salt, pepper, nutmeg
9. Heat through and serve with crusty bread
