1.5 lbs chicken breast
2 cans diced tomatoes
1 can black beans
1 can corn
1 onion, diced
3 cloves garlic
Chicken broth
Cumin, chili powder
Tortilla chips, avocado, cheese
šØāš³ Instructions
š Step 1: Add chicken
Place chicken breasts in bottom of crock pot.
š„« Step 2: Add vegetables
Add diced tomatoes, black beans (drained), corn (drained), onion, and garlic.
š§ Step 3: Season
Add cumin, chili powder, salt, and pepper.
š„£ Step 4: Add broth
Pour in enough chicken broth to cover ingredients (about 4 cups).
š„ Step 5: Cook
Cover and cook on LOW for 5-6 hours until chicken is cooked through.
š Step 6: Shred chicken
Remove chicken and shred with two forks. Return to pot.
š„ Step 7: Stir and taste
Stir well. Taste and adjust seasonings as needed.
ā²ļø Step 8: Heat through
Cook 15 more minutes to heat shredded chicken.
š½ļø Step 9: Serve with toppings
Ladle into bowls. Top with crushed tortilla chips, avocado, and cheese!
