1. Heat oil in large skillet
2. Add ground turkey and cook until browned
3. Add diced vegetables (peppers, carrots)
4. Season with low-sodium soy sauce, ginger, garlic
5. Cook until vegetables are tender, 5-7 minutes
6. Remove from heat and let cool slightly
7. Wash and dry lettuce leaves
8. Spoon turkey mixture into each lettuce cup
9. Garnish with green onions and serve
