🥘 Ingredients
4 cups mixed vegetables (broccoli, snap peas, carrots, bell peppers)
8 oz tofu, cubed
2 tbsp low-sodium soy sauce
1 tbsp ginger
2 cloves garlic
1 tbsp sesame oil
2 cups brown rice
👨🍳 Instructions
1. Press tofu to remove excess water, cube
2. Heat oil in wok or large skillet over high heat
3. Add tofu cubes and cook until golden on all sides
4. Remove tofu and set aside
5. Add mixed vegetables to wok
6. Stir-fry 4-5 minutes until crisp-tender
7. Return tofu to wok
8. Add soy sauce, ginger, garlic, and sesame oil
9. Serve over brown rice
