🥘 Ingredients

2 cups quinoa, cooked 1 can chickpeas, roasted 2 cups roasted vegetables (sweet potato, cauliflower, broccoli) 2 cups kale or spinach ¼ cup tahini dressing Sesame seeds

👨‍🍳 Instructions

1. Cook quinoa according to package directions 2. Toss chickpeas with olive oil and spices 3. Roast chickpeas at 425°F for 25 minutes until crispy 4. Cut vegetables (sweet potato, cauliflower, broccoli) into chunks 5. Roast vegetables at 425°F for 25-30 minutes 6. Massage kale or spinach with lemon juice 7. Build bowls: quinoa, roasted vegetables, crispy chickpeas 8. Add massaged greens 9. Drizzle with tahini dressing and sesame seeds
