4 chicken breasts, diced
4 cups cauliflower rice
2 cups mixed vegetables
2 cloves garlic
2 tbsp olive oil
Fresh herbs (parsley, cilantro)
Lemon juice
Salt and pepper
👨🍳 Instructions
1. Dice chicken breast into bite-sized pieces
2. Pulse cauliflower in food processor to rice consistency
3. Heat olive oil in large skillet
4. Sauté chicken until golden and cooked through
5. Remove chicken and set aside
6. Add cauliflower rice to pan
7. Sauté 5-7 minutes until tender
8. Add mixed vegetables and return chicken to pan
9. Season with herbs, lemon juice, salt, and pepper
