🥘 Ingredients
1 lb spaghetti
4 oz guanciale or pancetta, diced
4 large eggs
1 cup pecorino romano, grated
Black pepper
Salt
👨🍳 Instructions
1. Bring large pot of salted water to boil
2. Cook spaghetti according to package directions until al dente
3. Meanwhile, cook diced guanciale or bacon in large skillet until crispy
4. Beat eggs with grated Parmesan, salt, and black pepper
5. Reserve 1 cup pasta water, then drain spaghetti
6. Remove bacon pan from heat, add hot pasta
7. Quickly stir in egg mixture, tossing constantly
8. Add pasta water gradually until creamy consistency
9. Serve immediately with extra Parmesan and black pepper
