🥘 Ingredients
2 cups arborio rice
8 oz mixed mushrooms, sliced
1 cup white wine
6 cups chicken broth, warm
1 onion, diced
½ cup parmesan
3 tbsp butter
👨🍳 Instructions
1. Heat butter in large pot over medium heat
2. Sauté diced onions until softened
3. Add arborio rice, stir to coat with butter
4. Pour in white wine, stir until absorbed
5. Add warm chicken broth 1 ladle at a time, stirring constantly
6. Meanwhile, sauté sliced mushrooms in butter until golden
7. Continue adding broth and stirring for 18-20 minutes
8. When rice is creamy but still has bite, stir in mushrooms and Parmesan
9. Season with salt and pepper, garnish with fresh parsley
