Eggplant Parmesan

Classic Italian: Eggplant Parmesan

🥘 Ingredients

2 large eggplants, sliced 28 oz marinara sauce 2 cups mozzarella ½ cup parmesan 2 eggs 2 cups breadcrumbs Flour for dredging

👨‍🍳 Instructions

1. Slice eggplant into 1/4-inch rounds, salt and drain 30 minutes 2. Preheat oven to 375°F 3. Pat eggplant dry, brush with olive oil, and bake 20 minutes 4. Spread 1/2 cup marinara in baking dish 5. Layer: eggplant, marinara, mozzarella, Parmesan 6. Repeat layers until ingredients are used 7. Top final layer with extra cheese 8. Bake 35-40 minutes until bubbly and golden 9. Let rest 10 minutes, garnish with fresh basil
