2 lbs chicken thighs, cubed
3 tbsp butter
1 onion, diced
4 cloves garlic, minced
1 tbsp ginger, grated
2 cups heavy cream
1 can tomato sauce (no sugar added)
2 tbsp curry powder
1 tsp garam masala
Fresh cilantro
👨🍳 Instructions
🔪 Step 1: Prep chicken
Cut chicken thighs into bite-sized cubes. Season with salt and pepper.
🔥 Step 2: Brown chicken
Melt 2 tbsp butter in large skillet. Brown chicken pieces 3-4 minutes per side. Remove and set aside.
🧅 Step 3: Sauté aromatics
In same pan, sauté onion until soft. Add garlic and ginger, cook 1 minute until fragrant.
🧂 Step 4: Add spices
Stir in curry powder and garam masala. Toast spices for 30 seconds.
🍅 Step 5: Add tomato sauce
Pour in tomato sauce. Simmer 5 minutes, stirring occasionally.
🥛 Step 6: Add cream
Stir in heavy cream and remaining butter. Mix until smooth and creamy.
🍗 Step 7: Return chicken
Add browned chicken back to sauce. Coat all pieces well.
⏲️ Step 8: Simmer
Simmer on low 15-20 minutes until chicken is cooked through and sauce thickens.
🍽️ Step 9: Serve
Garnish with fresh cilantro. Serve over cauliflower rice!
