1 large head cauliflower, riced
3 eggs, beaten
1 cup mixed vegetables (no corn or peas)
3 tbsp coconut aminos or soy sauce
2 tbsp sesame oil
3 cloves garlic, minced
1 tbsp ginger, grated
2 green onions, sliced
Optional: cooked shrimp or chicken
👨🍳 Instructions
🥦 Step 1: Rice cauliflower
Pulse cauliflower florets in food processor until rice-sized pieces.
🔥 Step 2: Cook eggs
Scramble eggs in large wok or skillet. Remove and set aside.
🫒 Step 3: Heat oil
Add sesame oil to same pan over high heat.
🧄 Step 4: Sauté aromatics
Add garlic and ginger. Cook 30 seconds until fragrant.
🥕 Step 5: Add vegetables
Add mixed vegetables. Stir-fry 3-4 minutes until tender-crisp.
🥦 Step 6: Add cauliflower rice
Add riced cauliflower. Stir-fry 5-7 minutes until tender.
🥫 Step 7: Season
Pour coconut aminos over everything. Stir to combine.
🥚 Step 8: Return eggs
Add scrambled eggs back to pan. Mix well.
🍽️ Step 9: Serve
Garnish with sliced green onions. Serve hot!
