4 chicken breasts
2 bell peppers, sliced
1 red onion, sliced
2 zucchini, sliced
3 tbsp olive oil
Italian seasoning
Salt and pepper
👨🍳 Instructions
1. Preheat oven to 425°F
2. Cut chicken breasts and vegetables (bell peppers, onions) into chunks
3. Arrange on large sheet pan in single layer
4. Drizzle with olive oil, season with salt, pepper, and garlic powder
5. Toss to coat evenly
6. Roast 25-30 minutes until chicken reaches 165°F
7. Stir halfway through for even cooking
8. Remove from oven and let rest 5 minutes
9. Serve with rice or quinoa
