🥘 Ingredients
3 cups cooked rice, cold
3 eggs, beaten
2 cups frozen mixed vegetables
3 tbsp soy sauce
2 cloves garlic
2 tbsp vegetable oil
Green onions
👨🍳 Instructions
1. Heat sesame oil in large wok or skillet over high heat
2. Scramble beaten eggs, remove and set aside
3. Add day-old cooked rice, break up clumps
4. Stir-fry rice 3-4 minutes
5. Add frozen mixed vegetables, stir-fry 3 minutes
6. Return scrambled eggs to wok
7. Pour soy sauce over everything and toss
8. Stir-fry 2 more minutes until heated through
9. Garnish with sliced green onions
